One Post Lasagne Soup

Lasagna is one of my favourite foods to eat. In general I love pasta but the cheesy saucy goodness of Lasagna is my weakness.  For those who are lovers of really hearty soups and Lasagna this is a soup you definitely have to try. Since I am a working mom, I love to make dishes that are both simplified and easy to prepare. I also like to make sure that the less dishes I have to wash the better it is for clean up time. Therefore I have made this a One Pot Lasagna Soup everything in one pot!

The list of ingredients are pretty much similar to what you would use to make a casserole type Lasagna the only real difference is the way its put together. Its a delicious and hearty meal and I can guarantee that the family will enjoy it just as much as mine does.

Directions

  • pour tablespoon olive oil in a large pot over heat. Once hot, cook beef  season with salt and pepper and garlic to taste, stirring until browned. Add remaining 1 Tbsp olive oil in pot, add chopped yellow onion and saute until it begins to sweat. Add in chicken broth, crushed tomatoes, tomato paste,fresh basil, oregano, fresh thyme, sugar, parsley, and continue to cook  to a boil, then reduce heat to medium-low, cover and simmer 15- 20 minutes.
  • break lasagna noodles into pieces ( i use ready bake noodles)
  • Add cooked/ready bake pasta to soup along with 1/2 cup – 1 cup pasta water as desired. In a separate bowl,  stir together mozzarella, parmesan and ricotta cheese.
  • Once lasagna is cook spoon into bowls and add cheese mixture and sprinkle with chopped parsley
  • Enjoy!

    I’ll have to try this one out. I eat soup everyday, and it doesn’t hurt my feelings that it’s easy to make. Any idea if this freezes well?

      You better get yourself some soup! I am not quite sure it freezes well I think if you planned to do that, put some aside before adding the Lasagna noodles. Have a great Monday!

    I wonder if this would work in a slow cooker, I would like to prepare before school/work and return home to have something delicious like this.
