Homemade Tomato Soup

I’m sure many of you have experienced after a stomach bug, you’re hungry and you want nothing more than to have a comforting meal that isn’t to heavy on your tender stomach. I decided to whip up a quick Tomato Soup for lunch, after having a stomach flu that lasted a couple days. Since I still wasn’t feeling 100% better I didn’t want to spend too much time in the Kitchen but still wanted something that I would enjoy.

With just a few ingredients that I had on hand and 20 minutes to prepare this was the best soup I’ve had in a long time. Its the perfect soup on a cold day and it also freezes well for the days when you don’t feel like cooking. Homemade Tomato Soup

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4-6 servings

Serving Size: 1 Cup

Homemade Tomato Soup


1 Tbsp Canola oil
1 Onion puree
2 Tbsp Garlic (minced)
1 Can of Stewed Tomatoes
2 1/2 Cup of Chicken/Beef Stock
1/4 Cup Tomato paste
1 Tbsp Parsley for garnish
1 Tsp fresh ground Black Pepper


Heat oil over medium heat in pan
Add Onion puree to pan an cook for 2 mins
Add minced Garlic, Stewed Tomatoes, both stocks and bring to a boil for 5 mins
Add Tomato paste, fresh Black pepper and stir for 1 min
Remove from heat and pour mixture into a blender and puree for 2 mins
Pour into bowls and dress with Parsley for garnish
