White Cheddar Grilled Cheese Taco Sandwiches

My children love Taco Tuesday. As for me, I love using left overs to take the guess work out of meal planning for a couple days. Normally when I cook I make enough to have left overs and create new meals. My kids love warm sandwiches and I had some left over Taco Meat from last weeks Tacos that I stored so I decided to make White Cheddar Grilled Cheese Taco Sandwiches. I chose White Cheddar because my youngest hates cheese and its a good way to mask it, being that its white.

In terms of using Taco meat, the possibilities are endless with what type of meat you decide on using. I haven’t tried anything else besides the meat I have. However I am sure it will taste just as good. For an added crunch I also added some Tortilla chips. To give it that real Taco Tuesday feel since we are a little off schedule being that we eat Tacos on Tuesdays. Instead of using regular Ketchup as a dipping option as you do with traditional grilled cheese. I went with a Salsa instead and added a little bit of heat for taste.

The kids dove right in to the sandwiches, its much different than what they are use to eating. So I was a little weary if they would enjoy the concept of eating Taco Sandwiches as much as I did. Now that I have shared with you how much my family enjoyed this meal. Its time for me to share the recipe so you and your family can enjoy it too.

White Cheddar Grilled Cheese Taco Sandwiches

White Cheddar Grilled Cheese Taco Sandwiches

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4 Sandwiches

Ingredients

3 tbsp Butter
2 C Taco Meat
1 Loaf Texas style or Thick Slice Bread
2 C of Cracker Barrel extra old White Cheddar Cheese
1/2 C of salsa for dipping
1 tsp of Chili Paste

Instructions

1. In a bowl re-warm Taco meat in the microwave until warm and set aside
2. Butter both sides of toast
3. Shred Cheese in Bowl and set aside
4. Pre heat frying pan over medium heat
5. Place 1 slice of toast, butter side down into pan,
6. Sprinkle a generous amount of cheese, followed by a heaping spoon of Taco meat,another sprinkle of cheese, then the top slice of Toast butter side facing you.
7. At this time the bottom toast should be golden and cheese melted.
8. With a spatula flip Sandwich over and continue grilling until golden Brown
9. Repeat steps 5-8 for the remaining Sandwiches to be made.
10.Serve in halves and enjoy
Dipping Sauce
Mix salsa and chili paste together and serve in dipping bowl.
