Hey friends! how are you keeping warm on these cold dreary days? The last few days here where I am have been very wet, the kids had no school yesterday due to the freezing rain storm that we had. On days like the ones we have been having all I want to do is cuddle up on the couch with a book, my favourite drink, maybe a good show or scrolling through Instagram. I also love cooking meals that allows me to enjoy hanging out on the couch or spending more time watching the kids play around.

One Pot Roasted Garlic Chili Mac and Cheese

Since I spend so much time in the kitchen between prepping meals, washing the piles of dishes that come from prepping. I am constantly looking for ways to cut down the amount of dishes I use. I discovered my love for preparing one pot meals. They are comforting on those cold days we experience during the Winter months and they can be eaten for a couple days and taste better with time. Being that my family enjoys homemade meals like chili as well as Mac and Cheese. It only made sense to combine the both of them in  one pot of goodness. I also wanted to share my recipe with you all so that you can try something new and tasty, one that saves alot of clean up time and can be stored in batches for nights where cooking is difficult to get in. One Pot Roasted Garlic Chili Mac and Cheese.4

One Pot Roasted Garlic Chili Mac and Cheese

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes


2 lbs Ground Beef
2 tbsp Olive Oil
1 white Onion diced
5 cloves of Garlic Roasted
3 C of Beef Broth
Large can of diced Tomatoes
1 C of red and white Kidney beans ( half cup of each)
1/2 c of Black Beans
1 tsp of Chili powder
1 tbsp Cumin
salt and pepper to your taste
1 Bag of pasta of choice (elbow, penne, bow tie)
1 C shredded Cheese( I used a mix of Monterrey Jack and White Cheddar)
2 tbsp Parsley Flakes


Preheat oven to 390F
On a piece of foil, place garlic cloves and drizzle olive oil, wrap and roast for 15 minutes or until room becomes fragrant
Heat pot deep enough for a one pot meal add olive oil, diced onion and roasted garlic with ground meat cook until browned
Drain excess oil
Add beef broth and dry seasonings except for parsley
Bring to a slight boil
Add kidney beans, black beans, tomatoes and pasta and bring to a full boil while stirring to coat pasta with liquid
Reduce heat to a simmer in order to pasta to cook through( about 10 minutes, depending on pasta being used)
Remove from heat add cheese and stir, top with parsley and serve
